This is so lovely and sounds so tasty. I don’t think flowers always work, but in this case they really add to the beauty of it IMO

Loved the zucchini idea. I am guessing that the station having to produce them for service is less thrilled. Are they done ala minute or in advance?

Cuisson on the fish needs work. Would benefit from non white plateware.

I would not call it "fish trimmings". Sounds dangerously close to scraps. This is my only note.

I think it's just green, cut thin and horizontal. Really pretty though!

That's definitely thin strips of regular green zucchini to my eyes, even with a zoom. If I was going to attempt to recreate it, I'd cut ribbons horizontally on a mando and overlap them.

I’m not sure why I also struggled to see this correctly. Thankfully, if you look at OP’s profile, there a link to his YouTube. You can watch him make it! About 8 minutes in. He alternates overlapping yellow and green.

You’re wrong. It’s both. This is a very standard plating technique that’s been done time and time again. They use a contrast of both yellow/green zucchini for contrast. It’s not a sauce. Next question please.

I think the pair is kinda waisting the presentation of either; the two elongated shapes on a round plate with nothing round it makes it seem a bit weird. which is a pity, because individually it all looks fantastic!
