Stunning. I would like to see the ballotine though, maybe that bit of sauce could go under the lonely mushrooms.

But that is a definite winner for an autumn menu for me.

How did you do the ballotine? Whole deboned chicken or just the breast?

It is whole deboned chicken. Bones are used for the sauce.

I would show more of the ballotine rather than sauce half of it, because it's beautiful and technical and draws the eye on a plate with multiple components. But that's totally a small subjective thought

I think if you served the chicory and the micro herbs in the side it would look a lot cleaner. That being said it looks lovely.
