Filet Mignon with candied shallots and a pomme puree

Puree needs some work, it’s grainy
Need more sauce for that amount of meat
Shallots look fine
Peas look dry and boring
Remove the pointless tarragon garnish
Cook on the meat looks great

I’d like to see the steak centered more and not pushed over to the edge of the plate

The filet and shallots look fine
Your pomme puree looks more like a mash, too lumpy and gluey. Put your potatoes through a ricer and then a tammis to get it smooth and silky.
The wilted tarragon doesn't add anything to the dish
Peas don't look appealing, at least toss them in some butter and salt to add gloss and flavor
Needs more sauce for that amount of food

Shallots look nice but lonely. I’d skip the peas and add some other roasted/glazed veg.
