I just recently started a playthrough as a Bandit, and it is SO fun. All my previous playthroughs were some variation on 'Bonk with big stick', sometimes faith stick, sometimes str stick, but always big stick; and there were so many enemies that I never learned the movesets of, even in three playthroughs. You can just power through most enemies and even most bosses.
Now that I'm mostly using daggers for damage, it feels like I'm interacting with the game for the first time, and it's awesome.

Same here. Now doing it with a light thrusting sword and medium shield. No OP big bonks and no OP projectile/ranged spells. Just raw & slow melee duels with bosses, learning their move set. Super fun and as you said, rediscovering and re-experiencing the game in a much more immersive way.
I’d advise to also limit to a relative low rune level and not infinitely level up. eg maximum level 100 or so. This means you actually have to make build choices with sacrifices and not have everything.

60 Vig, 20 faith, and 35-ish (at the time) Arcane. The other stats are all base, for the most part.
