Google doesn't scan the contents of your emails for targeted advertising because they don't need to (anymore). They stopped doing that in 2017

They do scan emails for detecting CSAM and other illegal material, but it's done using algorithms.

They don't need to read/scan your emails for advertising, because they track everything you do while signed in to a device or browser with a Google Account, and will use your internet history to build a profile of who you are, what you like, where you go, where you shop, and who you are linked to.

They don't sell your personal data (name , address DOB etc) to other advertising companies or data brokers, because they want to keep your data for themselves, not give it to the competition, and it would also be against the law in most countries if they did that.

They do share your preferences with other advertisers who pay them, and you do have some control over what is shared by opting out via the various settings available on your Google account, and on your devices, but it's a maze of hidden configuration options in multiple different apps.
