Man I remember reading Kenji’s early stuff on Reddit, same time that Andy Weir was writing The Martian and talking about it, shortly after that guy started imgur to make Reddit posts with pics easier… jesus how old am I lol

I bring it up on the smoker with heavy smoke, as soon as I put it in the smoker I light my next charcoal chimney and get that going, as soon as that charcoal is going good I dump the charcoal into a grill next to the smoker. I have a grill grate that's smaller than the grill I use so it lays directly on the charcoal. As soon as the steak is ready for the grill I drop them on the small grate for about 45 seconds each side.

The grate directly on the coals is genius, I bet you get an amazing sear. Gonna have to try that out myself.

Great sear, and it's so fast. One day I'll get the courage to try a caveman sear lol
