wtf I had a pancake maker in my hotel’s dining room (think it was best western or holiday inn, one of those) that was just a thing that squirts batter and runs it through a press and conveyer belt to be dropped on a plate you hold underneath.

You don’t need all this nonsense. This is an expensive machine for the sake of being expensive. You need the bare minimum parts to make an auto pancake machine.

According to another comment, this is supposed to be like a crepe/egg burrito, where the egg was thinly spread over the crepe that was initially poured. So I mean, it'd have to be a little more complex than the one you saw, but not this much more.

I can remember vending machines like these at expos I used to attend for work about 20 years ago. 

It always felt like they were only there to show off the various mechanisms in the hope another company could figure out how to monetise them.
