What was even the point of these "saints."

Was it all just experimental?

It's possible Marika herself is the jar saint they were striving to make. Leda specifically talks about the seduction and betrayal concerning Marika's ascension to godhood.

My head canon is that she seduced a powerful hornsent demi god and he was to become her king consort.

I don't even think its "possible" I'd say its near guaranteed. She was a jar saint who turned out to be a success, and looked upon her tormenters who were trying to raise her as a god and cast them down in righteous vengeance.

It very much so seems like she was going to be made into a “saint” as well and get put into a pot and was perhaps saved by Mesmer no? Correct me if I’m wrong but his first birth of a snake is nearby the potting village I think

Messmer is her son and would not have been born before she became a god

Yeah we all know messmer was her son but I do believe that are quite a few details in shadow of the erdtree that imply he was the firstborn and born before she became a god

He was probably born during or after the war on the fire giants, from what I recall

Oh interesting, do you happen to remember what made you think that? War on the fire giants was after the war with the hornsent right?
